I first made these Coffee Cream Monster Muffin Donuts for my child's birthday party, and they immediately became the hit of the dessert table. Everyone loved decorating their own donut and the coffee cream gave it an irresistible twist.

Ingredients

  • Muffin Donut Base: 2 cups all-purpose flour, 1 cup granulated sugar, 2 tsp baking powder, 1/2 tsp baking soda, 1/4 tsp salt, 1/2 cup unsalted butter (melted), 2 large eggs, 3/4 cup whole milk, 1/2 cup brewed strong coffee (cooled), 1 tsp vanilla extract
  • Coffee Cream Topping: 1 cup heavy cream (chilled), 3 tbsp powdered sugar, 2 tbsp instant coffee granules, 1/2 tsp vanilla extract
  • Monster Decorations: Candy eyes (store-bought or homemade), assorted colored sprinkles, edible gel food coloring (optional)

Instructions

Prepare Pan:
Preheat the oven to 350°F (175°C). Grease a 12-cavity donut pan or muffin pan.
Mix Dry Ingredients:
In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
Mix Wet Ingredients:
In another bowl, combine melted butter, eggs, milk, cooled coffee, and vanilla extract.
Combine Mixtures:
Pour the wet ingredients into the dry ingredients and mix gently until just combined. Do not overmix.
Fill Pan:
Spoon or pipe the batter evenly into the prepared donut or muffin pan, filling each cavity about 3/4 full.
Bake:
Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Make Coffee Cream:
Dissolve instant coffee granules in 1 tsp of hot water and let cool. In a chilled bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form. Gently fold in the dissolved coffee.
Decorate:
Once donuts are cool, pipe or spread the coffee cream generously on top. Decorate with candy eyes, sprinkles, and food coloring to create monster faces.
